Apotheke Mixology will open its fourth location on October 16 inside Moxy South Beach, accessible through an unmarked entrance on Washington Avenue rather than through the hotel lobby — a deliberate design choice consistent with the brand's speakeasy-adjacent positioning. The Miami Beach debut marks the concept's first Florida footprint and its third city, following the original Doyers Street, Chinatown location launched in 2008, a Los Angeles outpost opened in 2018, and a NoMad, New York City venue added in 2022.

The Formula List

Mixology Director Nicolas O'Connor developed nine cocktails exclusively for the South Beach venue, organized by intended effect across six categories: Health & Beauty, Stimulants, Painkillers, Aphrodisiacs, Euphoric Enhancers, and Stress Relievers. Signature builds include Novia Del Sol — vodka infused with calendula, coconut, and California orange cordial, finished with tamarind, turmeric, and Meyer lemon — and Bilongo, a dark-aged rum drink incorporating açaí, pistachio cream, maca root, and Dubai Chocolate Bitters. The South Beach list rotates in Historic Formulas from the New York and Los Angeles locations alongside the nine new originals. "Apotheke doesn't just garnish with plants like an afterthought," O'Connor said. "We build the drink in collaboration with them."

The botanical-forward approach differentiates Apotheke from the volume-driven nightlife model that dominates much of South Beach's hospitality corridor. By organizing cocktails around emotional outcome rather than spirit category, the brand is targeting a consumer segment increasingly drawn to functional and wellness-adjacent beverage experiences — a trend that has accelerated across the broader craft cocktail and spirits sector.

Competitive Context

Apotheke's expansion into Miami positions it within a densely competitive luxury bar market that has attracted national concepts in recent cycles. Within Moxy South Beach, the venue shares a culinary lineup with Naked Tomato by Chef Eyal Shani and Serena, a rooftop Latin fusion concept — underscoring Marriott's strategy of clustering distinct food-and-beverage operators under one hotel roof to drive destination traffic.

The brand carries additional weight from its design accolades: the Chinatown original was cited by Architectural Digest as one of the best speakeasies in America; the Los Angeles location received a German Design Award for interior architecture; and Apotheke NoMad earned Americas Winner for Club & Bar Design at the 2023 Society of British and International Interior Design awards. Those credentials matter in a market where interior concept has become a primary driver of social media reach and press coverage.

Apotheke was co-founded by siblings Heather Tierney and the late Christopher Tierney, whose visual language and brand identity carry through to the South Beach location, completed by his longtime partners. The venue opens daily from 6:30 p.m. with walk-ins accepted as capacity allows; reservation infrastructure will be announced separately.
