Bob's Red Mill is reformulating its Gluten Free 1-to-1 Baking Flour, the Oregon-based miller's flagship gluten-free SKU, citing improved taste and texture while preserving the product's cup-for-cup substitution ratio in non-yeast recipes. The updated blend is currently rolling out to eight major retail chains — Costco, Sprouts, Whole Foods, Amazon, Albertsons, Kroger, Publix, and Wegmans — marking one of the more consequential product updates the employee-owned company has made since the flour's original launch.

The reformulation maintains compliance with the company's dedicated 100% gluten-free production facility in Milwaukie, Oregon, and continues to undergo ELISA Gluten Assay testing to verify gluten-free status. The blend targets non-yeast baking applications — cookies, cakes, and muffins — where texture parity with conventional wheat flour has historically been a friction point for gluten-free consumers and foodservice operators alike.

Brand Refresh Debut

The updated flour is also the first Bob's Red Mill product to reach retail shelves in the company's newly redesigned packaging, which debuted in spring 2026 alongside a new logo. The redesign is intended to improve on-shelf navigation and make attribute callouts — such as gluten-free certification — more legible at shelf. "Our brand refresh is designed to make our products easier to find and key attributes like gluten free easier to identify," said Margret Brown, Creative Director at Bob's Red Mill, noting the timing with the reformulated flour was deliberate.

"This updated formula builds on those qualities consumers already know and love, while delivering even better taste and texture across their favorite recipes."
