Catch Hospitality Group will open The Corner Store at The Cosmopolitan of Las Vegas on November 9, bringing the SoHo-born concept to the Strip for its first-ever expansion outside New York City. Reservations are already live, signalling strong operator confidence in the Las Vegas fine-dining market heading into the holiday travel season.

The Concept

The restaurant is a joint venture between MGM Resorts International and Catch Hospitality Group — a partnership that dates to the 2018 opening of CATCH at ARIA Resort & Casino. Chef Michael Vignola, who leads the New York original, will oversee culinary direction in collaboration with Executive Chef Daniel Bernardo on the ground in Las Vegas. The menu is built around an ingredient-first take on elevated American classics: signature dishes include Lobster & Caviar Rolls with tarragon-celery remoulade, a Wagyu French Dip anchored by 72-hour slow-roasted Westholme Australian ribeye, and Five Cheese Pizza Rolls. A Las Vegas-exclusive Butcher's Counter will feature the Rosewood Ranch Wagyu Tomahawk and Wagyu Porterhouse, positioning the property to capture the premium steakhouse spend that remains one of the Strip's most durable revenue streams.

Bar Program and Design

The beverage program, led by Catch Hospitality Group Beverage Director Lucas Robinson alongside The Cosmopolitan's Head of Mixology Gedeon Tsegaye, centres on a Martini-forward menu that imports SoHo signatures — including the Tomato Martini and Sour Cream & Onion Martini — while adding Las Vegas-exclusive creations such as a version of Oli's Dirty Martini served with mascarpone caviar olives. A large-format Martini Service designed for two to three guests is intended to drive table spend. The wine list is curated by Catch Hospitality Group Wine Director Emily Buse, recognised by Wine Spectator as one of the top 50 sommeliers in the United States, alongside MGM Resorts Master Sommelier and Executive Director of Wine Douglas Kim — a credential pairing that underscores the group's ambition to compete with the Strip's established fine-dining wine programs.

The space, designed by Rockwell Group — the firm behind the original SoHo location — occupies the resort's third floor and spans several interconnected rooms: a main bar, a Martini Room centred on a green onyx bar, and a main dining room whose aesthetic references vintage train cars. A private dining room accommodating up to 24 guests, divisible into two smaller configurations, provides a dedicated group and events revenue channel — an increasingly important profit centre for Las Vegas restaurant operators. Hours run Sunday through Thursday, 5 p.m. to 10 p.m., with extended service Friday and Saturday.

Expansion Trajectory

The Las Vegas opening is one component of a broader growth push for Catch Hospitality Group. Since its 2011 founding in New York City's Meatpacking District, the group has expanded the Catch brand to Los Angeles (2016), Las Vegas (2018), Aspen (2021), Miami Beach (2024), Dallas (2024), Scottsdale (2025), and Mexico City (2026). A new concept at 9 West 57th Street in Manhattan is slated for 2027. The Corner Store Las Vegas represents the group's sharpest test yet of whether its urban, neighbourhood-restaurant formula — built on communal dining and craft cocktails — can translate into a high-volume resort environment where competitive F&B programming determines a significant share of property differentiation.
