Cellar Insights has launched the Rotten Potato Data Project, a compensated data-sharing initiative designed to build an industry-wide early-warning library for potato storage spoilage by aggregating digital records from past loss events across grower and operator networks.
The Initiative
The program targets growers and storage operators who have experienced significant spoilage events, offering financial compensation in exchange for structured digital records documenting those incidents. The goal is to assemble a large enough dataset to identify patterns — environmental, operational, or logistical — that precede storage failures, enabling earlier intervention before losses escalate.
Potato storage spoilage remains a persistent and costly challenge across the fresh and processed supply chain. Post-harvest losses in root vegetable storage can reach double-digit percentages under suboptimal temperature, humidity, or ventilation conditions, eroding margins for both growers and downstream processors. Centralised spoilage data has historically been fragmented, held in silos by individual operators with little commercial incentive to share it.
Why It Matters
By attaching direct compensation to data contribution, Cellar Insights is attempting to resolve that incentive gap — effectively creating a market for loss records that previously held no tradeable value. The resulting library, if sufficiently populated, could underpin predictive analytics tools that alert storage managers to elevated spoilage risk before visible deterioration occurs.
The initiative has implications beyond individual operators. Potato processors, foodservice distributors, and retailers that source fresh or frozen potato products all absorb downstream costs when storage failures reduce available supply or degrade quality specifications. An industry-calibrated early-warning system could tighten supply-chain reliability across the category, supporting more consistent pricing and procurement planning for buyers further along the value chain.
What's Next
Cellar Insights has not disclosed target data-contribution volumes, compensation rates, or a timeline for when the early-warning library will be made available to participating members. The company's model — pooling proprietary operational records in exchange for shared analytical benefit — mirrors approaches taken in other perishable categories, where cooperative data platforms have gained traction among growers and packers seeking to reduce waste without ceding competitive information.
For storage operators evaluating participation, the calculus centres on whether the predictive tools ultimately derived from the dataset outweigh any sensitivity around disclosing historical loss records. Early-mover contributors, however, stand to shape the model's baseline assumptions, potentially giving them an advantage in how risk thresholds are calibrated. Coverage of related supply-chain technology trends in fresh produce and post-harvest loss reduction strategies provides additional context for operators assessing the programme.
