Chili's Grill & Bar](https://www.chilis.com) is adding a Chicken Parm Big Crispy to its permanent menu on Oct. 20, extending a chicken sandwich platform that has driven a 175% increase in sandwich orders per restaurant per day since the original Big Crispy debuted in April — a gain measured through the end of Q4 fiscal 2026.

The new item layers Chili's existing Fried Mozzarella and marinara sauce on top of the Big Crispy chicken sandwich base, served alongside fries, white cheddar mac & cheese, and sides of marinara and house-made ranch. It is being positioned as a hybrid between two already-selling items, reducing incremental supply-chain complexity while expanding average check potential — a formula casual-dining operators have leaned on heavily as traffic growth has been difficult to sustain across the segment.

Regional Rollout First

Before the national launch, Chili's staged an exclusive preview beginning Oct. 13 at three locations in Florence, Ky.; Rome, Ga.; and Venice, Fla. — cities whose names carry Italian associations despite being wholly American. The first 150 guests at each location received commemorative plates. The chain also commissioned a promotional video featuring reality television personality Nicole "Snooki" Polizzi, filmed in Florence, Ky., leaning into the brand's increasingly irreverent marketing posture. Chili's was named Ad Age's Brand of the Year in both 2025 and 2026, a recognition that tracks with the outsized social-media traction its Triple Dipper and Fried Mozzarella items have generated.

The limited regional preview before a broad rollout is a proven demand-seeding tactic in casual dining, allowing operators to surface operational issues at scale before system-wide deployment across Chili's roughly 1,600 restaurants in 29 countries.

Menu Strategy in Focus

"We've loved seeing how guests responded to the Big Crispy, and it got us thinking about how we could build on that with flavors we know they already love," said George Felix, chief marketing officer and executive vice president of Brinker International (NYSE: EAT), Chili's parent. The Chicken Parm variant is the latest in a six-SKU Big Crispy franchise, and it signals that Brinker views the chicken sandwich category as a durable traffic driver rather than a promotional one-off.

For casual-dining operators broadly, chicken sandwiches have become a strategic battleground. The category gained structural momentum from the so-called chicken sandwich wars that intensified in the quick-service segment beginning in 2019, and full-service chains have since worked to capture share of stomach from guests who might otherwise visit a fast-food drive-through. A 175% volume increase at the restaurant level — if sustained — would represent a material contribution to Brinker's comp-sales trajectory, which investors will scrutinize when the company reports fiscal 2027 first-quarter results. The Chicken Parm Big Crispy will be available at participating Chili's locations nationwide starting Oct. 20, accessible by requesting it through a team member rather than through digital or printed menus — a deliberate friction point the brand has used before to create a sense of insider access and social-media shareability.
