The Launch

Coast to Coast Kitchen, the Boston-area frozen seafood appetizer brand founded by Emma Hernan, is adding three products to its nationwide Target assortment: a Lobster Empanada and Sweet Chili Shrimp Empanada developed exclusively for the retailer, plus a new Crab Rangoon. The rollout, effective immediately across all Target locations including Alaska and Hawaii, marks the brand's second major shelf expansion at the mass retailer following its February 2026 debut.

The Numbers

Since the initial Target listing, Coast to Coast Kitchen has generated millions of dollars in sales and attracted nearly 100,000 consumers who were new to the broader seafood appetizer category — a meaningful acquisition metric for a segment that has historically struggled to convert younger shoppers. Millennials represented 80.0% of those new-to-category buyers. Perhaps more telling for the retailer: 40.0% of those first-time transactions included three or more units, suggesting strong basket attachment and above-average price-per-trip contribution.

The three new SKUs join an existing Target lineup that includes New England Crab Cakes, Bacon Scallops, Shrimp Spring Rolls, and Crab Minis — giving the brand a seven-item presence in the frozen appetizer aisle.

Why It Matters

Empanadas are the product that originally put Coast to Coast Kitchen on retail shelves and remain its commercial anchor. The decision to develop retailer-exclusive flavors — rather than simply extending existing SKUs — is a deliberate strategy to deepen Target's commitment and limit comparability with other channels. Exclusive SKUs also give mass retailers a defensible differentiation argument within the frozen seafood set, where private-label pressure has intensified over the past two years.

Hernan, founder and CEO, controls the supply chain end-to-end through two production facilities located outside Boston: the company's original factory, valued at $5.5 million, and a second facility valued at $7.5 million. The combined operations employ more than 100 people. That degree of vertical integration is relatively uncommon among emerging frozen food brands, most of which rely on co-manufacturers, and gives Coast to Coast Kitchen tighter control over margin and quality as it scales.

The frozen appetizer and snack category has drawn increasing interest from specialty and better-for-you brands seeking shelf presence at large-format retailers. Target, in particular, has invested in differentiated food brands that skew toward younger, urban shoppers — demographics that align with Coast to Coast Kitchen's 80.0% millennial customer base. For trade buyers and distributors tracking shelf dynamics at mass retail, the brand's category-creation metrics — nearly 100,000 incremental buyers in under eight months — will carry weight in future line-review conversations.

Hernan is the third generation of her family to work in food manufacturing, a lineage that informs both the brand's product development process and its operational credibility. The new flavors draw on biographical geography: the Lobster Empanada references her Massachusetts roots, while the Sweet Chili Shrimp reflects her time in California. The Crab Rangoon was inspired by a dish her grandfather, a professional chef, prepared for family gatherings.

"These flavors bring together my love for both coasts and make my products truly coast to coast," Hernan said. "Food, for me, has always been about sharing a great bite with the people you love."
