Three-time James Beard Award nominee Chef Vinnie Cimino and Cordelia proprietor Andrew Watts are taking their Cleveland restaurant brand into sports-and-entertainment territory, opening Delia's — a dedicated fried chicken and JoJo concept — on the Street Level concourse of Rocket Arena near Portal 26 in time for the Cleveland Cavaliers' first preseason home game of the 2026-27 season.
The Concept
Delia's is engineered for arena throughput without sacrificing the culinary identity that earned Cordelia its following on East 4th Street. The menu is deliberately tight: mix-and-match drumsticks and boneless thighs sold in two- and three-piece Buckets, two chicken sandwiches — a fried version finished with Cimino's signature Magic Dust and a miso-marinated grilled option — and the Midwest Polish Boy, a nod to the Cleveland street-food canon. Sides include malt vinegar-rinsed JoJo fries, pimento potato salad and coleslaw. A lineup of house-made sauces — black garlic mayo, hot sauce mayo, Fancy Sauce and Cleveland ketchup — rounds out the offer.
"Delia's is Cordelia made faster and more casual, but with the same heart," said Chef Vinnie Cimino. "We wanted to cook food that people can spot from across the concourse, get in their hands quickly and still feel like they're eating something made with real care."
Arena Foodservice Context
The opening reflects a broader shift in premium sports venue foodservice, where arena operators are increasingly displacing generic concession models with local, chef-credentialed brands to differentiate the gameday experience and drive per-cap spending. Rock Entertainment Group's partnership with Cordelia follows a pattern visible across major-market arenas: sourcing recognizable regional restaurant talent rather than expanding national QSR licenses.
"The concession experience is usually pretty transactional, and we saw a chance to change that," said Andrew Watts. "We wanted Delia's to feel like a real neighborhood chicken joint that just happens to live inside the arena."
Chris Kaiser, Chief Marketing Officer of the Cleveland Cavaliers and Rock Entertainment Group, framed the deal as a deliberate local-brand strategy. "Cordelia has long been a Cleveland favorite and a neighbor of Rocket Arena," Kaiser said. "Bringing Delia's into our venue deepens our commitment to great Cleveland brands and enhances the best gameday experience in sports."
Why It Matters
For Cimino and Watts, the arena location represents a significant volume and visibility step-change. Rocket Arena hosts nearly 200 ticketed events annually and draws approximately 1.6 million patrons to downtown Cleveland each year, giving Delia's a built-in captive audience that most independent fast-casual operators cannot access through traditional site selection. The concept's focused menu and storefront-style build-out — white brick, hand-painted signage, an illustrated portrait of the Delia namesake — are designed to preserve brand legibility at scale while accommodating the service-speed demands of high-traffic concourse traffic.
Cimino, also recognized as a Food & Wine Best New Chef and whose restaurant ROSY was recently cited by The New York Times as one of the best restaurants in America, brings considerable culinary credibility to a segment where brand equity is increasingly the differentiator. For operators and foodservice directors evaluating chef-partnership models, the Delia's model — a spin-off concept purpose-built for venue constraints rather than a direct extension of the flagship — offers a replicable template worth watching. The fast-casual chicken category remains one of the most active in foodservice development, and arena concourses are emerging as a new competitive battleground for emerging regional brands.
