The New Concept
Genesis House Restaurant has relaunched its second-floor dining room in New York's Meatpacking District under a formal operating partnership with Hand Hospitality, the New York-based group behind Jua, Cho Dang Gol, and Her Name Is Han, among other Korean and Japanese concepts. The relaunch, announced October 20, 2026, positions the venue as a refined but approachable Korean dining destination anchored by a regionally structured menu and a cocktail program from Seoul's Bar Cham — making it the internationally ranked bar's first official restaurant partnership anywhere outside South Korea.
The Culinary Program
The menu's centrepiece is a signature bulgogi program built around three distinct regional preparations — Seoul, Eonyang, and Gwangyang — each reflecting the sourcing traditions and cooking style of its origin city. Supporting dishes are designed for sharing and include seafood jeon, yukhwe, Korean fried chicken, and bingsoo. The format mirrors a broader industry trend toward regionally differentiated Korean dining that has gained traction in major U.S. markets over the past three years, as operators move beyond generalist Korean-American menus toward more origin-specific storytelling.
Hand Hospitality, founded by Kihyun Lee in New York in 2011, brings operational depth and a track record in the upscale Korean segment. The group's portfolio spans casual and fine-dining venues and extends to advisory services covering menu development, branding, and hospitality strategy — making it a natural fit for a brand-anchored venue like Genesis House, where culinary programming serves a broader experiential and marketing function for the Genesis automotive brand.
Bar Cham's U.S. Debut
The beverage program marks the most commercially significant element of the relaunch from an industry standpoint. Bar Cham, founded in 2018 in Seochon — one of Seoul's oldest neighborhoods — ranked No. 33 on Asia's 50 Best Bars 2026 and No. 71 on World's 50 Best Bars 2026. Its cocktail menu at Genesis House draws on six geographic regions of the South Korean peninsula, including Seoul and Gyeonggi-do, Gangwon-do, Chungcheong-do, Gyeongsang-do, Jeolla-do, and Jeju Island. Signature offerings include the Songpyeon — a blend of Pungjeong Sagye Winter Soju 42, chestnut makgeolli, lemon, ginger, cinnamon, and chocolate — and the Cham Negroni, built on roasted Solomon's seal, soju infused with dried mandarin peel, vermouth, and Campari.
"Genesis House felt like a natural setting for our first official restaurant partnership, bringing our shared appreciation for culture, craft, and hospitality together under one roof," said Byungjin Lim, co-owner and bartender at Bar Cham. "Each cocktail tells a story about the regions, history, and seasons that inspire it."
Joe McHugh, director of brand experience at Genesis House, described Bar Cham's "respect for heritage and distinctly modern sensibility" as complementary to the dining experience being constructed for guests. Reservations for daytime tea and dinner are now available via Resy; lunch service timing has not yet been announced.
The partnership reflects a widening appetite among globally ranked bars to extend their footprint through curated restaurant collaborations rather than standalone outposts — a lower-capital model that preserves brand integrity while expanding geographic reach. For Hand Hospitality, the Genesis House mandate adds a flagship-tier venue to a portfolio that already dominates New York's Korean fine-dining tier, and signals continued operator confidence in Korean cuisine's commercial momentum in the U.S. foodservice market.
