Airport hospitality operator OTG and Hormel Foods' SPAM brand are placing a new product at Minneapolis–Saint Paul International Airport ahead of its Minnesota State Fair debut, giving travelers early access to the SPAM Dog — a hot dog reformulation of the 89-year-old canned meat staple — through three chef-developed limited-time offerings available while supplies last through the second week of September.

The Airport Rollout

Three OTG-operated restaurants in MSP's Terminal 1 are each serving a distinct SPAM Dog preparation. Custom Burger, with locations near Gates G1-6 and G18, offers a fair-battered SPAM Dog with pineapple ketchup. Shoyu, at the entrance to Concourse G, features a wok-fried jasmine rice bowl with diced SPAM Dog, egg, peas, carrots, green onion, togarashi and Maggi glaze. Mill City Tavern, near Gate G18, plates a gochujang-glazed grilled SPAM Dog topped with scallion slaw and Thai peanut drizzle, served with fries. All three recipes were developed exclusively by OTG's culinary team.

The airport preview window runs until the SPAM Dog's official fair debut on Aug. 27, when it will be available through Sept. 7 at The SPAM Truck positioned south of the Grandstand Building at the Minnesota State Fair. The sequencing is a deliberate channel strategy: airport captive audiences — typically higher-income travelers with dwell time — serve as an effective first-exposure vehicle for limited-edition food items before broader event rollout.

Brand and Operator Rationale

For OTG, which operates dining and hospitality concepts across major North American airports, the tie-up extends a pattern of aligning airport food programs with regional identity. "Partnering with the SPAM brand to bring these creations to MSP allows travelers to enjoy an authentic taste of Minnesota before they even reach the State Fair," said Matt King, OTG's chief executive officer.

For Hormel, the collaboration is also a product-launch amplifier. The SPAM Dog represents a format extension for a brand that has changed little since its 1937 introduction — and deploying it first in a high-visibility airport environment, then at one of the country's most-attended state fairs, maximizes earned media exposure at minimal distribution cost. Haley Eggum, brand manager for the SPAM brand, pointed to the operator-driven creativity as central to the strategy: "The chefs at OTG's restaurants have put together three fun, flavorful dishes that celebrate the versatility of the SPAM brand while giving travelers a sneak peek at the SPAM Dog before it heads to the Minnesota State Fair."

Hormel Foods, which is headquartered in Austin, Minnesota — a city nicknamed "SPAM Town USA" — reported over $12 billion in annual revenue across a portfolio that includes Planters, Skippy, Applegate, and Jennie-O, among more than 30 brands. The company is a member of the S&P 500 Dividend Aristocrats index. The SPAM brand's longevity and cult-food positioning have made it a recurring subject of limited-edition foodservice activations in recent years, a trend that aligns with broader consumer-trend movements toward nostalgic and regional flavors across airport and travel dining segments.

The airport dining segment has seen sustained investment from operators betting on captive, time-rich consumers willing to pay a premium for quality food experiences. OTG has positioned its model around tech-enabled ordering and culinary partnerships — a differentiator in a category historically dominated by national quick-service chains. A regional brand co-promotion of this kind, where both partners share promotional real estate in-terminal, is consistent with how specialty food operators are competing for gate-area wallet share.
