Izzio Artisan Bakery](https://izziobakery.com) has elevated Sara Kafadar to president and chief commercial officer, formalizing a co-leadership structure alongside founder and chief executive officer Etai Baron. The move codifies a partnership that has been operational in practice for years, giving Kafadar equal standing in guiding the company's long-term strategy, organizational direction and corporate positioning.
The Growth Case
The promotion arrives against a backdrop of accelerating commercial performance. Retail sales at the Louisville, Colo.-based bakery have grown more than 40% year-over-year for the second consecutive year, and the brand has expanded distribution to more than 15,000 retail locations across the U.S. Izzio was named to Bain & Company's Insurgent Brands list in both 2025 and 2026, a designation that tracks outperforming independent brands reshaping fast-moving consumer goods categories. Earlier in 2026, the company opened a second production facility in Thornton, Colo., adding baking capacity to meet sustained demand.
Kafadar joined the company as CCO in 2015, bringing prior leadership experience from IAWS Foods and ARYZTA businesses including Delice de France, Cuisine de France, and La Brea Bakery. In her expanded role, she retains oversight of sales, marketing, research and development, and brand development, with added responsibility for strategic revenue generation, customer value creation, and operational efficiency. Baron, a co-founder who has led the company as CEO since 2014, will continue to focus on institutional strength and long-term enterprise value.
"Sara has been an integral partner in building izzio into the business it is today, helping consumers rethink what they expect from their food," Baron said. Kafadar framed the dual mandate as an extension of an existing dynamic: "Etai and I have built an amazing partnership rooted in mutual respect, complementary strengths and a shared vision."
Portfolio and Channel Expansion
The leadership announcement coincides with a wave of product and channel activity. Izzio earlier this year launched Organic Artisan Sourdough Sandwich Breads to capture demand in the packaged bread aisle, and recently introduced a direct-to-consumer subscription program delivering real sourdough breads across the contiguous U.S. — a channel increasingly used by specialty food brands to build recurring revenue outside traditional grocery. For trade operators and retail buyers, the subscription move signals Izzio's intent to reduce dependence on any single distribution channel.
Three SKUs are launching this month: a limited-edition Cranberry Orange Sourdough Batard, a Super Sour Sourdough targeting consumers who want pronounced fermentation flavor, and a French Sourdough sliced loaf positioned around traditional artisan technique. Looking further ahead, the company said it plans to extend its sourdough platform into categories beyond bread — a meaningful step for a brand whose identity has been built entirely around long-fermented loaves. The expansion into adjacent formats could open new retail shelf sets and foodservice applications, areas where artisan bread brands have found incremental volume in recent years.
For the broader specialty baking segment, Izzio's trajectory illustrates how independent operators with differentiated process claims — in this case, slow fermentation and small-batch production — are capturing share from larger commodity bread producers as consumers scrutinize ingredient lists more closely. The co-leadership structure, rare at a company of this size, reflects an attempt to institutionalize the commercial and operational capabilities that have driven that share gain without concentrating strategic risk in a single executive.
