The Product

Lou Malnati's is extending the commercial window on its Italian Combo Beef-Za, opening nationwide direct-to-consumer shipping through tastesofchicago.com after a successful limited-time run at its brick-and-mortar locations during Italian Beef Month in May. The move converts in-store velocity into an e-commerce revenue stream, giving the 70-unit Chicago-rooted chain a scalable channel for specialty menu items beyond its Chicagoland, Arizona, and Wisconsin footprint.

The Collaboration

The pizza was developed in partnership with Jeff Mauro, the Emmy-nominated Food Network host and founder of Mauro Provisions, a Chicago-centric specialty food brand launched in 2020. The build layers Mauro Provisions Italian Beef — produced exclusively with Certified Angus Beef — alongside a Honey G Pepper Relish made from finely diced Mauro Provisions Medium Craft Giardiniera and Grade A honey. Those toppings sit over Lou Malnati's proprietary sausage blend, vine-ripened tomatoes, Wisconsin mozzarella, and the brand's signature Buttercrust. The collaboration links two established Chicago food-and-beverage properties, each with distinct consumer brand equity, in a co-branded SKU that also creates an upsell opportunity: Mauro Provisions Craft Giardiniera and Honey G Pepper Relish are being offered separately through the same shipping platform.

"Lou Malnati's has been perfecting their deep dish game for generations," said Mauro. "This pizza keeps the heart of what makes the sandwich special while giving people a whole new way to enjoy it."

Marc Malnati, owner of Lou Malnati's, framed the shipping launch as a logical extension of proven in-restaurant demand. "We're excited to make it available through Tastes of Chicago so even more people can enjoy it," he said.

Distribution & Shelf Life

The Italian Combo Beef-Za ships as a Small Deep Dish, handmade, flash-frozen, and packaged ready-to-bake, a fulfillment format Lou Malnati's has used to reach out-of-market consumers for years via Tastes of Chicago — its dedicated shipping brand. Availability is time-limited, with the current window closing Aug. 26. The tight deadline applies scarcity pressure common to limited-edition foodservice drops and mirrors the brand's broader strategy of rotating specialty offerings to sustain repeat engagement.

For the broader deep-dish and regional pizza category, the launch illustrates an ongoing trend in which established restaurant brands monetize cult-item status through direct-to-consumer frozen or chilled formats rather than waiting for national franchise expansion. Chicago-style deep dish carries strong geographic identity, and the Mauro co-brand amplifies the item's cultural credibility for consumers outside Illinois who may be encountering the format for the first time. The move also reinforces how celebrity chef partnerships are reshaping foodservice menu strategy, turning limited-time offers into branded product lines with independent distribution tails.

Operators and food retailers tracking direct-to-consumer shipping trends in the pizza segment will note that the flash-freeze-and-ship model allows a regional chain to compete for national share without the capital cost of physical expansion — a calculus that becomes more attractive as last-mile cold-chain logistics continue to mature.
