Outback Steakhouse is betting its turnaround on the item that built the brand. The Tampa-based casual-dining chain on Wednesday unveiled "Best Steaks Ever," a top-to-bottom reset of its steak program that tightens cut specifications, mandates hand-trimming and revises seasoning and preparation standards across its roughly 700 domestic locations.
The initiative is a direct response to pressure facing the broader casual-dining segment, where chains have struggled to justify sit-down price points against fast-casual competition. Only 41% of Americans feel confident distinguishing between steak cuts, according to internal Outback research — a consumer-education gap the brand says it intends to close at the table.
The Lineup
The revised menu introduces five cuts positioned across distinct flavor and texture profiles. The Down Under Delmonico Ribeye is a new thick-cut addition emphasizing deep marbling and char. The New York Strip is entirely new to Outback's menu, positioned as a balance of tenderness and full-bodied flavor. Victoria's Barrel-Cut Filet Mignon, already a menu anchor, has been reformulated with hand-trimming for a more consistent seared crust. The Center-Cut Sirloin and Rockhampton Ribeye round out the lineup, each defined by tighter grading and preparation standards.

The Chief Steak Officer
To anchor the program operationally and in marketing, Outback has appointed Chef Efrem Cutler to the newly created role of Chief Steak Officer. Cutler brings more than 45 years of culinary experience and will serve as the brand's internal and external authority on marbling standards, trimming technique, seasoning and cook execution. The role signals that Outback intends the quality reset to be ongoing rather than a single campaign flight.
"The cut matters, but so do the marbling, trimming, seasoning and how you cook it," Cutler said. "Best Steaks Ever is about bringing all of those pieces together, so every cut delivers what steak lovers are looking for."
The appointment is notable from an operational standpoint: casual-dining brands at scale have historically struggled to enforce consistent quality standards across large franchise and company-operated footprints. Centralizing steak authority in a named executive role is a structural choice as much as a marketing one.
Consumer Activation
Outback is supporting the relaunch with a grassroots content program called Spokesbooth, an in-restaurant installation that invites diners to record first-bite reactions on camera. The brand plans to feature authentic guest footage across its social channels, leaning into user-generated content as a lower-cost, higher-credibility media vehicle — a tactic that has proven effective for competitors in the better-burger and fast-casual steak segments.
The rollout arrives as parent company Bloomin' Brands has flagged Outback as a priority for operational investment.
