The New Products

Paris Baguette is adding two ghost pepper-chocolate items to its seasonal menu this Halloween, marking the bakery-café chain's first foray into spicy-sweet product development. The Ghost Pepper Chocolate Marble Mochi Donut layers the brand's signature mochi base with chocolate marble frosting and a ghost pepper finish; the Ghost Pepper Iced Hot Chocolate pairs iced chocolate with the same capsaicin-forward heat. Both items are available at participating U.S. cafés from October 1 through November 1.

The introductions follow a broader industry pattern: ghost pepper and other high-Scoville ingredients have moved from specialty hot-sauce channels into mainstream foodservice and bakery formats over the past two years, as operators seek novelty to drive incremental traffic and social-media engagement. For Paris Baguette, which is projecting 1,000 North American cafés by 2030, the Halloween window represents a key limited-time-offer test ahead of a heavier Q4 calendar.

Returning SKUs and Loyalty Mechanics

Five returning seasonal items round out the lineup: the Halloween Scream Donut (cookies-and-cream King Cream Donut with chocolate cookie eyes), Spider Mochi Donut, Vanilla Scream Ghost Cake, Dirt & Worms Chocolate Chiffon Cake, and Dirt & Worms Frappe. A Halloween Donut Box — a 12-piece assortment of Spider Mochi and Halloween Scream Donuts — is available through the brand's catering channel, an increasingly important revenue stream for bakery-café operators targeting workplace and classroom occasions.

The promotional calendar leans heavily on Paris Baguette's PB Rewards loyalty program to sustain traffic across the full 32-day window. Members are offered a free medium coffee with any purchase on September 29 for National Coffee Day, a buy-one-get-one pastry on October 16 for Boss's Day, double-points Mondays from October 5 through October 26, a free pastry with any beverage purchase on October 31, and a $0.13 pastry with any purchase on November 13.

Brand Positioning

"This Halloween, we wanted to surprise and delight with something unexpected — the fiery kick of ghost pepper paired with rich, indulgent chocolate, while still embracing the nostalgia that makes Halloween so special," said Cathy Chavenet, Chief Marketing Officer of Paris Baguette North America.

The dual strategy — novelty SKUs to generate earned media alongside nostalgia-driven returning items — mirrors tactics used across the limited-time-offer bakery and café segment to balance new-customer acquisition with repeat-visit frequency from the existing loyalty base. Paris Baguette operates across more than 160 U.S. locations, and the Halloween LTO provides franchisees with a fully built promotional toolkit during one of foodservice's highest-impulse consumer periods.
