The Lineup

Paris Baguette is introducing its broadest seasonal menu push to date on November 4, deploying 11 limited-time products across its bakery-café network in North America. The rollout centers on three flavor platforms — Crème Brûlée, Tiramisu, and the returning Peppermint Mocha — and arrives alongside a four-SKU Thanksgiving cake collection timed to the holiday entertaining window.

The move reflects a broader strategic pattern among franchise bakery-café operators, who have leaned into seasonal limited-time offerings as a traffic driver during the fourth quarter, when foot traffic and average check sizes historically peak. Paris Baguette, which is targeting 1,000 North American locations by 2030, is using the holiday window to deepen per-visit spend and reward-program engagement simultaneously.

What's on the Menu

The Crème Brûlée platform anchors the new introductions, comprising a Supreme Croissant filled with vanilla pastry cream and finished with caramelized sugar, a Cinnamon Churro Crème Brûlée Mini Croissant, and a Crème Brûlée Latte built on Lavazza espresso. The Peppermint Mocha franchise — a returning staple — expands this year to include a Peppermint Mochi Donut, a Peppermint Mocha Supreme Croissant, a Peppermint Hot Chocolate Waffle, and a Peppermint Hot Chocolate made with Ghirardelli. The Tiramisu Latte joins the Tiramisu Cake, which the chain is simultaneously converting from a seasonal to a permanent menu item — a signal of sustained consumer demand for the format.

The Thanksgiving cake collection, available through November 29, comprises four items: a Caramel Apple Streusel Trifle, a Pumpkin Spice Layer Cake, a Carrot Cake with Cream Cheese Icing, and a Caramel Apple Streusel Cheesecake. The slate targets both traditional Thanksgiving households and the growing "Friendsgiving" occasion, which Nielsen data has previously identified as a discrete retail and foodservice demand moment among 25-to-44-year-old consumers.

Loyalty and Promotions

"The holidays are all about that magical, nostalgic feeling, and our winter wonderland-inspired menu is designed to capture it in every bite and sip," said Cathy Chavenet, Chief Marketing Officer at Paris Baguette North America. "With our handcrafted Thanksgiving and Friendsgiving cakes, there's something sweet for every gathering this season."

Paris Baguette is layering in a series of PB Rewards promotional events throughout November to drive app downloads and loyalty enrollment. The calendar includes a free medium coffee for Veterans Day on November 11, a $0.13 pastry offer on November 13, a buy-one-get-one cake slice for National Cake Day on November 23, and a free coffee or pastry on Cyber Monday, November 30. First-time app sign-ups receive a complimentary pastry with any purchase, a common acquisition mechanic for franchise operators seeking to build first-party data ahead of peak season.

The holiday push is consistent with how peer bakery-café and fast-casual concepts are approaching Q4. Operators across the specialty coffee and bakery segment have increasingly structured loyalty calendars around retail holiday moments rather than limiting promotions to traditional food occasions — a tactic that also surfaces in the franchise development strategies of expanding chains looking to build same-store sales alongside new-unit growth.
