The New Lineup

Smashburger is adding a New York deli-inspired limited-time lineup to menus at participating locations nationwide beginning October 6, anchored by two pastrami builds that mark the Denver-based fast-casual chain's most ingredient-forward seasonal push in recent memory. The launch spans 178 units — 112 corporate-owned and 66 franchised — and is backed by simultaneous permanent additions to the core menu.

The limited-time window introduces the New York Pastrami Smash, a Certified Angus Beef burger stacked with smoked black pastrami, Swiss cheese, grilled onions, dill pickles, mustard, and mayo on a butter-toasted Parker House roll, alongside the New York Pastrami Big Dog, built on a 100% Angus beef quarter-pound hot dog with the same pastrami profile on a toasted Big Dog roll. Two Häagen-Dazs hand-spun seasonal shakes — a Pumpkin Spice and an Apple Pie — round out the fall offering.

Permanent Core Additions

Beyond the limited-time window, Smashburger is refreshing two grilled chicken sandwiches as permanent core-menu items: the Grilled Chicken Avocado Club, featuring an all-natural marinated filet, applewood-smoked bacon, fresh-sliced avocado, and ranch dressing, and a streamlined Deluxe Grilled Chicken Sandwich. Both are positioned to capture the sustained operator and consumer interest in high-protein, non-burger fast-casual options — a segment that has outpaced overall limited-service traffic growth for the past several quarters.

Chief Executive Jim Sullivan framed the rollout as consistent with a disciplined approach to menu development. "This lineup taps into the timeless appeal of New York deli classics while staying true to what we do best — premium ingredients, handcrafted preparation and incredible taste," Sullivan said. "We're intentionally developing the menu with innovations that create excitement for guests while supporting consistent execution for our operators." The emphasis on operator execution is notable: fast-casual brands have repeatedly flagged complexity as a drag on throughput and margins when limited-time offerings require non-standard prep.

Why It Matters

Smashburger's parent, Jollibee Foods Corporation, has been pressing its U.S. portfolio for improved unit economics following years of restructuring. Disciplined limited-time offerings — high-concept builds on existing protein platforms rather than net-new supply-chain additions — align with that cost posture. Pastrami, already held in inventory as a deli-adjacent ingredient, requires minimal new sourcing infrastructure, and the Häagen-Dazs shakes extend an existing shake program without adding equipment.

Chief Marketing Officer Kate Savelli said the pastrami platform is designed to reinforce Smashburger's "craveability and culinary innovation" positioning relative to broader better-burger competition. The fast-casual burger segment, which includes chains competing directly on premium ingredients and craft preparation, has seen sustained pressure on average check as consumers trade down in response to persistent food-away-from-home inflation. Smashburger's dual strategy — headline-grabbing LTOs plus affordable everyday protein options — is a familiar playbook in the segment, but execution at 178 locations will test whether the chain's operational investments have yielded the consistency required to capitalize on the marketing spend.

For operators tracking LTO velocity trends across fast-casual, the pastrami launch follows a broader industry pattern explored in F&B Industry News's coverage of seasonal menu strategy and aligns with premium-ingredient sourcing shifts documented in our supply-chain analysis.
