The Product
Taco Bell and Milk Bar are launching their third co-developed dessert — a Milk Bar Birthday Cake Empanada priced at $3.49 — across nearly 10,000 U.S. Taco Bell restaurants beginning October 15, 2026, for a limited time. The item features a cake batter-flavored filling inside a crispy, golden empanada shell, finished with pink frosting and rainbow sprinkles, and arrives in custom branded packaging.
The collaboration extends a partnership that has moved through two prior formats: Strawberry Bell Truffles in 2022, which combined Milk Bar's signature Cake Truffles with pieces of Taco Bell's Crunchy Taco Shell, and Birthday Cake Churros in 2025, filled with birthday cake frosting and topped with pink confetti sprinkles. Each iteration has applied Milk Bar's Birthday Cake flavor profile to a different Taco Bell dessert vessel, a strategy that gives the QSR chain recurring menu news without requiring wholly original product development.
Loyalty Hook
To amplify the launch through its digital ecosystem, Taco Bell is extending a Rewards Member offer valid October 15 through October 28: members who have added a birthday to their profile may choose between a complimentary Milk Bar Birthday Cake Empanada or a regular Mountain Dew Baja Blast Freeze as their birthday reward at participating locations, while supplies last. The promotion is redeemable exclusively through the Taco Bell mobile app, reinforcing the chain's ongoing effort to drive app engagement alongside limited-time-offer traffic.
"Our fans have shown us they love seeing familiar flavors show up on the Taco Bell menu in exciting ways, and that's what makes partnering with Milk Bar so great," said Liz Matthews, Global Chief Food Innovation Officer at Taco Bell. "The Milk Bar Birthday Cake Empanada lets us take an iconic Birthday Cake flavor and reimagine it as a crispy Taco Bell treat that's nostalgic, unexpected and made for celebrating everyday moments."
Dessert as a Growth Lever
For Taco Bell, dessert remains a relatively underpenetrated daypart with high-margin potential. The chain's parent, Yum! Brands, has leaned on limited-time innovation to sustain average check and traffic in a competitive value environment. Co-branding with Milk Bar — a specialty bakery chain with 12 locations across New York, Los Angeles, Washington D.C., Las Vegas, Seattle, and Chicago, plus a national e-commerce business and a recently launched grocery retail line — gives the QSR access to an established premium-dessert identity without absorbing the full development cost.
For Milk Bar, founded by James Beard Award-winning chef Christina Tosi in 2008, the Taco Bell channel offers exposure at a scale its own footprint cannot match. "What I love most is seeing a flavor people know so well show up in a way they never expected," Tosi said. "You don't need a birthday to enjoy it."
The empanada format also positions Taco Bell to compete more directly in the handheld dessert segment that has gained traction across fast-casual and QSR menus in recent years, as operators look for portable, impulse-purchase additions that lift ticket averages without demanding significant kitchen complexity. For operators and franchisees tracking menu-mix trends, the launch was first previewed at Taco Bell's annual Live Más LIVE brand event in 2026, signaling that the chain views dessert co-branding as a repeatable franchise rather than a one-off stunt.
