Insomnia Cookies, the Philadelphia-based late-night bakery chain with more than 360 locations across the United States, Canada and the United Kingdom, is reformulating six core cookie SKUs to replace existing chocolate chips with larger chunks — roughly three times the volume of the former inclusions — at no change to retail price. The rollout began August 28 and is expected to reach full systemwide availability by October 1.
The six upgraded products are Cookies 'N Cream, Confetti Deluxe, Chocolate Chunk Brownie, White Chocolate Chunk Macadamia, Peanut Butter Chunk and Peanut Butter Cup Deluxe. The new inclusions — semisweet chocolate chunks, real white chocolate chunks and peanut butter chunks — replace the former chips on a one-to-one basis by weight, meaning chocolate content per unit stays flat while piece size increases. Certain recipes received minor formulation adjustments to accommodate the larger inclusions; bake times and temperatures are unchanged.
Demand Signal Behind the Decision
The reformulation is grounded in transaction data the brand has accumulated since 2023. More than 1.75 million customers have included a chunk-format cookie in their first identifiable Insomnia purchase over that period — a figure the company cites as evidence that the chunk format drives trial and acquisition rather than simply serving existing loyalists. Chocolate Chunk was already the chain's top-selling cookie before this expansion, providing an internal benchmark for the reformulation.
Development began in November 2025 and ran approximately six months, encompassing multiple rounds of recipe refinement, operational testing and consumer evaluation. Insomnia's Tasting Tuesdays program — a standing in-bakery sampling initiative — was used to validate the upgrade, with guests comparing control cookies made with the original chips against chunk versions. The company says feedback consistently favored the larger inclusions for delivering what it described as a more chocolate-forward, indulgent experience.
"The goal was simple: give the chocolate more impact," said Jessica Murgittroyd, Cookievation consultant for Insomnia Cookies. "A warm cookie deserves big, melty pockets of chocolate, and that's exactly what the chunks deliver."
Competitive and Operator Context
The move reflects a broader pattern in the specialty-bakery and snack segments, where operators are investing in ingredient quality and sensory differentiation to justify price points without raising them — particularly as consumers remain sensitive to food-away-from-home costs. Reformulating for a more premium ingredient profile while holding price is a defensible strategy for a chain competing not only with other bakery concepts but with grocery-channel cookie brands that have expanded their own artisan and chunk-format offerings. For Insomnia, which built its unit economics on late-night delivery and delivery-app penetration, product upgrades that increase repeat purchase rates carry direct revenue implications across a dense urban store network.
The company signaled the chunk expansion is part of a broader product roadmap. Additional announcements are expected over the coming months, though no specifics were disclosed. Operators managing franchise or multi-unit relationships in the bakery-café segment will want to monitor whether the reformulation affects ingredient procurement lead times or supplier concentration, given the simultaneous rollout across three markets.
