United Airlines (Nasdaq: UAL) is expanding its Chef's Table inflight dining program with 30 new dishes across salads, appetizers, and entrées, available exclusively to United Polaris international business class passengers from November 1 through December 31 — with seasonal rotations planned into 2027.

The Numbers

The program's first cycle, launched August 1, logged more than 60,000 meals served and generated customer satisfaction scores nearly 20 points higher than those for other preordered meals — a performance gap that United Airlines cited as the primary driver for accelerating the second rotation. The airline has invested more than $150 million in food and beverage improvements in 2025 alone, spanning inflight catering, its United Clubs lounge network, and digital meal pre-order infrastructure.

The Menu

The new cycle features 11 chefs from ten cities, each drawing on the food culture of a United hub or key international gateway. Highlights include Chef Nancy Silverton of Osteria Mozza (Los Angeles) contributing a spiral meat lasagna with passato and taleggio sauce; Chef David Barzelay of the two-Michelin-starred Lazy Bear (San Francisco) presenting a grilled rack of lamb with carrot barbecue sauce and cured carrots; and Chef Tomos Parry of Michelin-starred Mountain and Brat (London) offering a roasted pumpkin with rosemary stracciatella, pickled apples, and spiced pumpkin seeds.

The roster spans multiple James Beard Award winners and nominees. Chef Fariyal Abdullahi of Hav & Mar (Newark) brings Ethiopian-inflected European technique, while Chef Justin Yu of Theodore Rex (Houston) and Chef Penelope Wong of Yuan Wonton (Denver) — both James Beard Award winners — contribute dishes rooted in their respective cities' multicultural culinary identities. International gateways are covered by Chef Manu Buffara's Brazilian cuisine for the São Paulo route and Chef Tashi Gyamtso's farm-driven Japanese menu for Tokyo flights.

Meals are geographically assigned: each chef's dishes are served on lunch and dinner flights departing from the chef's home city. Polaris passengers can pre-order via United.com or the United mobile app beginning five days before departure and up to 24 hours prior to wheels-up.

Why It Matters

The collaboration illustrates a broader premium-cabin arms race among legacy carriers, where differentiated food and beverage programming has become a measurable loyalty lever. United's willingness to quantify satisfaction lift — and to link that figure directly to a content-led culinary brand — signals a shift toward treating inflight dining as a trackable revenue-adjacent product rather than a cost center.

"The strong response to Chef's Table reinforces the value of bringing perspectives of world-class chefs onboard in a way that reflects the destinations we serve and the dining experiences our customers seek," said Aaron McMillan, United's Managing Director of Hospitality Programs.

The Chef's Table brand, which premiered its Emmy Award-winning Netflix documentary series in 2015, also gains meaningful distribution through the partnership. Justin Connor, President of Chef's Table Projects, noted the collaboration introduces "millions of travelers" to the chefs featured in the series. Beyond the plate, United is embedding exclusive Chef's Table video content on seatback screens and making select episodes of the Chef's Table: Talks podcast — hosted by series creator David Gelb — available onboard, extending the content ecosystem to 35,000 feet.

The inflight dining push is consistent with a broader product investment cycle at United that includes expanded economy meal pre-order access, four new snackbox SKUs, an elevated wine program, and experimental Club dining formats including action stations and passed bites. For foodservice operators and hospitality suppliers tracking airline procurement signals, the seasonal rotation model — with an explicit commitment to continue through 2027 — suggests a multi-year contracted pipeline rather than a one-off marketing activation.
